Synopsis
Traditional Bulgarian cuisine, which we learned to appreciate and later to cook when growing up in Bulgaria, was mainly season-based. Our meals were freshly cooked with the produce available at the moment, except for three ingredients-yogurt, feta, and walnuts-these were available year-round and were used in all kinds of dishes, from breakfast and snacks, to lunches, dinners, and feasts. These dishes were not pretentious but were always fresh and delicious.
In this book, one or two of the three simple ingredients are present in all of the 33 family recipes we have compiled. Along with the recipes, we have included stories, variations, tips, and pictures. Also, as a bonus, we have provided a step-by-step process of making yogurt and fermented cabbage at home and recipes from our friend and guest-contributor Emma Wall who shares her love for cooking with yogurt, feta, and walnuts.
